    'Natural' wines

    I've combined both methods and have good results. I innoculate with yeast packets and then let it run its couse naturally without adding sulphites. I rack 2-3 times, top off & filtwr with mini jet. Also the addition of oak spirals can add a bit of complexity. Bottle after 6 months and enjoy...
