    I am going to bottle 6 Gallons of Finished Cabernet. When I sanitize my bottles do I rinse them after or just let them dry as is with the sulfite solution?

    Yes I added some sugar to bring up the SG pre-fermentation I also tested PH and TA and they both were fine. I am using a hydrometer not a refractomometer. I do have a refractometer and a conversion spreadsheet that i got from M&M website.

    Another good book if you haven't read it is "A Good Year" by Peter Mayle. Good read and takes you through the French Provence. The movie was good too but like all movies it strayed some from the book. This is a non-fiction book but a good read.

    Thanks folks for the insight. Yes it is the Eclipse Kit. As I said I am going to bulk age it. When I rack again in 3-4 months I'll see how it has progressed and then add more oak if needed.

    WineXpert Making my first Kit.

    I have the WE Eclipse Lodi Cab going right now. It is in secondary fermentation. All is looking good so far and will be racking and adding more oak this weekend. I plan on bulk aging it. Will let you know how it turns out, but I am happy so far with my first wine kit.

    WineXpert Eclipse Lodi 11 Cabernet

    I have just purchased the Winepert Eclipse Lodi 11 Cabernet wine kit. Looking through the ingredients it looks like a lot of oak additives (dust and cubes). Has anyone made this using all the oak? If so was the wine real oaky like chewing an oak tree or is it a more subtle oak taste?
