    Punching down in commercial quantities?

    All the wineries in my area so physically punch down 2-3 time a day. On occasion I'll help and it does wear you out. I can do 4 or 5 but that's about it.

    I think you may find any fruit wine will benefit from a little back sweetening to bring out the fruitiness. Plus the high alcohol content doesn't help either. I don't make many fruit wines but found the SG of 1.080 is a good target. I might recommend doing a few bench trails to see if it helps...

    You're probably want to get a humidifier as well. The AC will probably dry the air more than you want.

    I hate when this happens. A few days ago when I took a pH reading I had a huge difference in the readings. I just took a reading on two wines and whether it was agitated or not I got the same reading within a few hundredths. Thanks for your responses.
