    DangerDave's Dragon Blood Wine

Great work, everyone! I’m still learning from you all. Definitely going to try backsweetening with some brandy. A few notes on DB for those making their first batch. New wines are tart. They lose it with aging. DB is SUPPOSED to be tart, so we’re kind of cheating. We can drink it right away...

    Dragon's Blood

For the summer, I make a strawberry version of DB called Sweet Strawberry Tart. I use some extra lemon juice, and—as implied above—add some flavor at the end. I like using natural strawberry extract to give it that nice berry kick. When finished, it tastes much like strawberry lemonade. My wife...

    DangerDave's Dragon Blood Wine

Since some of you have asked, I am doing very well. Eat, drink, and be merry! I'm two and half years into retirement and loving every day. After my 1000 mile hike in 2015---and the long healing process that followed---I began the work on my house, which continues unabated. I still get some time...

    DangerDave's Dragon Blood Wine

Quick visit! Just wanted to give a shout-out to everyone still experimenting with the DB recipe. I'm still making a lot, loved by friend and foe alike! My "perfected version" has some extra tannin, and a shot of untoasted oak powder in the primary. Just as a note: After years of...

    DangerDave's Dragon Blood Wine

Surprise!!! The triple berry lemon combination is tart by nature. It's designed that way. Back sweetening will balance it out in the end. As with any wine, it will mellow over time. For me, six months seems to be the peak of flavor. Most of it doesn't last that long!

    Five Million Steps

Sorry for the long quiet. Thank you, Angelina, for sharing my post. I will try to keep you all updated better. Walking 15-20 miles a day makes me pretty tired come evening. Just getting camp set up and fixing dinner usually saps the last of my strength. I'm getting stronger each day, so now I...

    DangerDave's Dragon Blood Wine

I can see you are all making some awesome wines! Surprisingly, I have not tried an all blackberry version, but it's on my wish list. You guys/gals are on your own for the next six months, as I'll be on my walk. I'll try to make occasional updates in the "Five Million Steps" thread so you can...

    Five Million Steps

Well, you are all your own in wine making for the next six months. In a little over two weeks, I'll be taking my first steps on the AT, heading north from Harpers Ferry, West Virginia. I should hit New Jersey toward the end of May, New Hampshire by the end of June, and finish my norhtern leg...

    WMT (Unofficial) Mist Wine Contest

I'm an atheist, so I don't have a religion, but I understand and respect that others feel differently. Depending on the weather, I may have several tasters, or just me and Johnna. Regardless, we promise to give all of your wines the attention they deserve. :try Shooting for the 28th to...

    WMT (Unofficial) Mist Wine Contest

I think Joe is getting a bit antsy. It seems these little contests have about run their course, at least for me. I thought the choice of Mist wine would make for a lot of entries. But after nearly six months, we only have four entries. I think our first one only had, like three, didn't it...

    DangerDave's Dragon Blood Wine

I've never used brown sugar either, although I've seen people who have. Not sure who it was... I usually use red (dark) raisins when adding them to either a red wine or Dragon Blood. I commonly use golden raisins in my white wines with good results. I don't think you can go wrong with them. I...
