    Elderberry and the Green Goo.

I wonder if a guy could dry his own to escape the goo? Or is it something other than the dehydration in the commercial process that eliminates it?

    Acid adjustment questions

Those solutions are pretty stable. Maybe not good enough for a certified lab but they should get you within a tenth. I generally take pH readings whenever I pull a sample for measuring SG. I do TA with the pH meter. I think it’s more accurate than the color change detection. Especially with...

Winemaking. Short bursts of intense activity… and lots of waiting!

    Press day

The ferment looks (and tastes) good so far. Wine is typically pretty harsh at end of primary, but not so much this time. It’s all bubbling away in carboys now. I press and use a kitchen strainer to catch the big chunks ( no bag in the press) so I end up with a lot of gross lees. I typically...

    Press day

Do you let the gross lees settle out first? I pressed Friday evening and put it in glass. There is already 2-3” of gross lees in each carboy. Barrels are on the wish list. For now it’s oak spirals.

One gallon jug, tapered cork won't stay

I have some jug/cork combinations that just won’t stay put either. I typically use electrical tape over the top on each side of the airlock and a few winds around the neck to hold them down.

I got my first meager harvest from my Marquette this year. Next year I’ll have grapes from Petite Pearl, Frontenac, Itasca, and Brianna. Total of 88 vines so far.

Welcome to WMT. That’s a lotta vines! Are you planning to open a winery, or just an enthusiastic hobbyist?

    Elderberry wine

That is a lot of green goo. Did you use a lot of stems? I think the goo comes mostly from stem pieces. I put the umbels in the freezer then shake the berries off in a bag. Fewer stems that way. I never had a layer of goo on top but it ended up on my stirring spoon, container sides, and in...

    Another vineyard bird/varmit puzzle

Is it a slip-skin type grape? Perhaps the berries are splitting and the inside pops right out?

    Degassing (newbie)

I recommend against degassing newbies… or anyone really!

    Home Vineyard-Year 3

It’s one of the more popular vines for us tundra dwellers 😉. Like any grape, I’ve had a lot of ok wines and a few excellent ones. It blends well with others.

    Home Vineyard-Year 3

Well today I picked my Marquette. I only had 13 vines bearing and I pruned them to 15-20 clusters per vine. That’s the entire haul… maybe 30 lbs. The Petite Pearl are also three years old but the vines are so spindly I didn’t let them bear any this year. Next year I should have a crop on...

Two batches, one taking significantly longer to clear

Heck I have split a single batch in two carboys and had them clear at different rates 🤷🏻‍♂️

    Ferment on fruit?

I have made apple wine several times without a press. I don’t know how to paste a link. Just search for Apple wine without a press I chopped the fruit and used strainers and filter bags to remove the copious lees.

Post a Meme, any Meme! (no politics)

"Historically, the claim of consensus has been the first refuge of scoundrels; Gravity would like a word! As would “cigarettes cause cancer “. Just saying that free thinkers like to make the jump from “a scientific consensus was proven wrong” to “all scientific consensus is garbage”...
