    how do you judge the ripeness? I see a lot of variability here. Some are dark purple and others are solid green. I typically cut off the umbles and freeze them in paper bags then rub off the frozen berries.

    I got my netting up yesterday before the rain. I still need to add some clamps, but it was easier than I thought. only 14 vines have fruit. It’s not much, maybe 50 lbs of grapes, but it represents three years of blood, sweat and tears! I’m not letting those damn birds get my grapes!

    Definitely leave the fruit in until fermentation is nearly done (or just done). Remember to punch the bag with fruit down and give it a good stir every day.

    Hello

    If you really want to push ABV look at step feeding… you start out with a more “reasonable” ABV and add sugar in steps once you have the fermentation rolling. It allows she yeast to acclimate to the environment.

    Welcome. From what I understand, the old ways work and the new ways work… you just have more control when you use commercial yeast and nutrients.

    Veraison has started

    there are huge flocks of blackbirds in the marsh on one side and feeding in the oats on the other! On the plus side I have seen large flocks of tree swallows feeding on JB’s in the vineyard too.
