    Beginner Plum Wine

you are lucky. pits contain cyanide compounds. I did my masters thesis on destroying cyanide. So my friend, there is basis in fact. It is possible that pit fermentation is OK which you suggest but I won't go there. from Google; Some fresh fruits, including cherries, plums, peaches, nectarines...

I believe that outdoor ultrasonic strobes will repel all of your predators. Good luck with your choice!

    Vineyard Rodent Control

I've used ultrasonic strobes to successfully keep raccoons out of my corn. Raccoons love corn. So anything that is an outdoor ultrasonic strobe on a timer should work. Raccoons feed at night. It feels like you have raccoons.

    What's in your glass tonight?

retaste: Appearance - inky purple Smell - rich smoky, slightly charred roasted meat, cocoa, plums and venison Tannin - good Acid - very slightly high but that should let it age Flavour - this is good decent house red, almost as good as Regent Black Iris, the best home made red wine that...

shrink the recipe 4 fold and you should get 6+ gallons. slice the bananas and cut the dried figs in half. The sherry was stunning. I oaked it and let it bake in my attic from spring to fall to give it a caramel smell and flavour. I topped it up with demerara rum to get the alcohol up to 20%. I...

Italian prune plums pitted and frozen are excellent for wine. They will make a very tasty rose and a sensational sherry. Here is the first part of my sherry recipe from 2014 92 lb pitted plums 25 lb sultana raisins 17 lb over-ripe bananas 25 lb chopped dried figs 18 Imperial gallons of water...

Here are my re-tasting notes: Appearance - deep rose Smell - complex fruity smell, raspberry and honey smells are present but the russet apple smell is now slightly dominant but not by much. There is no trace of oxidation. Tannin - now the tannin slightly high but still okay from the Russet...

Blue plastic barrel (HDPE-2) after transporting iodine powder ??

flood the barrels with water and them smell them after they are drained. Once you don't smell iodine they should be fine to use for winemaking. Isopropyl alcohol residue will come off in the water soak.

    What's in your glass tonight?

My wife tasted Regent Black Iris and scored it 8/10 which is a good score score for her. She said that "it is rich and has lots of flavour." The Black Iris - wild cherries, blackberries and elderberries were fermented with RC212. The Regent was fermented with 71B. This is a no-brainer to make...

    First Time Cherry Wine

You won't need oak and the cherries will give you all of the tannin that you need. Adding tannin with or without oak will make the wine taste tangier so you will need more sugar to balance the flavour. I'd use 71B yeast to get the malic acid down.
