To blend or not to blend, that is the question

I'd make two blends. You have a challenge with these 3 varietals Petite Sirah - rich, high intensity, low acid (east of San Francisco this could be very good) (I'd ferment it with RC212 with B vitamin nutrients) Mourvedre - smells like Italian seasoning - sensational in Grenache with Syrah...

    Cleaning glass carboys

your carboys are etched. Once you follow Winemaker 81 your carboys should be chemically clean. i.e. even if they are slightly opaque from being etched they should be useable for storage of any of your wines. Whatever deposit you had is inorganic. Bleach would destroy an organic deposit.

I am new to wine making, not very new to grape growing.

you can add a kit wine to your Cab-Frontenac Lots of people here can help you do that once you weigh your Cabs-Frontenac and Isabella-Concord i.e. 2 wines I don't make kit wines but have over 40 years ago but lots of people here do and will help you make decent wines out of all of your...

    What's in your glass tonight?

I felt like tasting it again so I think I'll bottle into a split to leave 3.5 bottles to age: Smell - cocoa, chinese 5 spice, cola, elderberries Tannin - good Acid - very slightly high but okay Flavour - rich and tasty with a good aftertaste. Tannin lingers in the mouth so it should have no...
