    Can I bottle my wine without potassium sorbate?

    glycerin is fine as a sorbate substitute but glycerin won't stop bottle fermentation. If not too intense bottle fermentation mostly on white wines can be interesting i.e. Hobo Fizz Bomb Champagne. We actually covet fizz bombs! I've had a few some of which were really good el cheapo champagnes

    IF the SG is at or below 0.996 you can leave out sorbate. If it is above 0.996 you need sorbate.

    you don't need bentonite in a red since tannin does the same job wrt clearing protein haze unless you are doing grape reds in which case add pectic enzyme. You don't need pectic enzyme for red wines made from grapes.

    no that is ok. It will keep clearing. Leave it alone until it is super clear before you rack it and sulphite it. Assume up to a month in your containers to really clear.
