How many lbs of grapes fit in a 40 liter bladder press?

It will not fit 200 lbs. A gallon of water weighs ~8.3 lbs. The density of grape must will be a little different, but not vastly. 200 lbs of water would be about 24 gallons.

How long can I leave grape juice/wine after primary is complete ?

Obviously, this is only a guess. I would hazard a guess that you could safely press this weekend. A week or so in primary fermentation is typical. And there it's not a sin to press at, say, 1.020 SG. The wine might turn out a little lighter in color than you would prefer, but it could all be...

    Today I learned....

Many forums have a "Today I learned" thread to feature to highlight interesting facts that the poster recently came across. My contribution: We all know about Chaptalization, the term for adding sugar to the must to increase the alcohol content. Many of us know that this is named for...

Bottling - to purge, or not to purge…

You know, He may not have put it in the grapes, but He did make yeast such that they produces sulfites... i.e., some sulfites do occur naturally in wine.
