    What's new in your cellar?

We also have been members (among a few other clubs) , this is our 3rd year. I stuck with the Ellies and Diamond Mnt. Too bad Jack's is indeed out of stock, my Halls have their own 2 shelves in the basement!

WineXpert Selection Riesling Icewine Style 12L Wine Kit

I would say an icewine is supposed to be higher on the residual sugar list. The sweetness balances with the higher alcohol content of these wines and makes a nice balance. If you reduce the sweetness you may run the risk of having a "hot" tasting wine with too much alcoholic bite. However...

home winery vs vinter's best fruit concentrates

I just made the passionfruit one from homewinery last night. I used 1/2 gal + 1 pint concentrate along with a small 1 liter grape concentrate pack, sugar to 1.095, then water to about 5.8 gallons. I will let you know in a few weeks how it tastes. I have an extra pint of the concentrate to...

    Chilean Juice

So my local winery is having a mass order program for chilean juice and it seems a good deal, $58-$60 per bucket with choices like cab franc, cab sauv, carmenere, malbec, merlot, petit syrah, pinot noir, syrah, zin, chard, gewurtz, mocatel, pinot grig, riesling, sauv blanc, and viognier. I have...

RJ Spagnols Chilean Merlot appears to have gone bad...

From day 17 to day 45, that is I month of wine that was not topped up. How much is a good few inches? It may be oxidized, but hard to tell. Everything else seems fine to me.

Marchisio Variable capacity fermenting Volume Tank

Yea, I know they are not ideal. Ideally a smaller 10 gallon size would be great. Always looking for options instead of having one batch of wine in a 6.5g, 3g, 1g, and 1/2g carboys/jugs sitting around my basement. As far as cost, a 7 gallon stainless steel brewing bucket is $200, for a 26...

Marchisio Variable capacity fermenting Volume Tank

What is the lowest volume you can have in the 100L and still have it function properly? I regularly do 8-12 gallon batches.

    Rattlesnake Hills Cab

I am doing that one. I did 2 buckets of the cab and cofermented it with a merlot bucket. Just finished mlf and racked it over to a carboy. This one may be the best tasting red I have done so far!!

    Wine on tap

I had heard that as well. I can always occasionally give a spurt of CO2 from one of the other lines and just hook the Nitrogen back up afterwards. However I haven't found too much information regarding the length of time in a keg that would cause any noticeable decline in a wine that already...

    Wine on tap

Yep. I just went to a local Roberts oxygen and purchased the tank and gas from them. They refill by exchanging tanks so no need to purchase a brand new tank only to have to trade it in for a refill. Bought a nitrogen regulator ( or if you have an extra CO2 regulator they make an adapter to...

    Wine on tap

The small box is a rechargeable dehumidifier from amazon. Eva-dry E-333 Renewable Mini Dehumidifier. Was initially going to place the tanks on the outside and use a bulkhead through the wood for the gas, that would have given me room for 10-12 kegs...however, my wife reminded me my eyes are...

    Wine on tap

This is my new project. Still have the bottom skirt to do which will be 1x6 red oak like the front, stained and poly'ed. It has 8 taps, up to 3 can be nitrogen and 5-8 can be CO2.

    Wine on tap

So I am planning a couple wines to put on tap. One will be a less expensive white/red kit that I will dispense with nitrogen My other plan was to do the peach apricot island mist kit and put it on co2, and serve it carbonated. Anyone ever do this? I assume I don't have to be as careful...

    Topping up an Amarone

If you have an allinone pump you could use the headspace eliminator. Otherwise. I have used marbles but I found you need a significant amount to raise the level. I would use the wines mentioned to top up or rack down to smaller carboys.

Is this stuff on top normal?

It is probably just normal rafts of yeast. If you are at final gravity and are transferring for aging, hit it with the required chems (Kmeta and sorbate if needed) and allow to sit for a month at least. Recheck it and taste it, if it tastes alright you should be good to go. If you are...

    What are your 2017 goals?

I am planning to finish my kits that are on standby. Get the 3 fruit wines started from homewinery: Raspberry, Blackberry, and Passionfruit. Maybe make the blackberry into a port. I plan to finish up with my Keezer project. Putting last coats of polyurethane on the collar. 8 taps...
