    De-gassing - wine whip?

I use the AIO pump for transfers each time and between that and Father Time, seems to due the trick for me. The latest batch I have going is Cranberry Wine that I started February 2021, still in a 3 gal carboy. Getting close.

    DangerDave's Dragon Blood Wine

I believe it makes 6 gallons. If it's a one gallon jug, add it to 5 gallons of water then and the other amendments (sugar, k-meta etc.)

    Starting specific gravity

An imperial gallon is 160 fluid ounces. A U.S. gallon is 128 fluid ounces. Difference is significant.

Encourage Me and Where to Get….

I will agree with @Rice_Guy's statements but take exception with the first one. During the primary fermentation you want to introduce oxygen into the must because yeast requires it to reproduce, thereafter you need to exclude it.

    Bottle aging

    Not with straight Elderberry Wine.

Encourage Me and Where to Get….

This could be CO2 outgassing and picking up the sediment. Normal situation.

    Bottle aging

"Lost' a bottle of Elderberry Wine about 7 yo. Still have it, just wondering when to pull the cork.

Early drinkers and subjects for aging

Most of my country wines start reaching their peak at about one year. One that can be drank earlier is Dragon's Blood (recipe by Danger Dave)

    Prepper thoughts.

@BigDaveK: In the 15 years I've been home here in SE Ohio only had one 8-hour day w/o electricity, all others where why shorter terms. I haven't had much commercial freeze dried food to say it is too salty, but then I have my own freeze dryer. I, too, have the issue about a well pump (220 V)...
