WineXpert Slow Fermentation with Dessert Wine

SG got down to 1.014 late this afternoon. Added Chaptalization packet, that put me back up to 1.028. Fermentation stopped for about a couple hours but has now picked back up a little stronger than it was. I'll hold off on adding another yeast starter unless it stalls at some point above...

WineXpert Slow Fermentation with Dessert Wine

@winemaker81 , thanks for the information and the link, I like your site, there's a lot of information on there. @Jovimaple , thanks for the information. I think I'm progressing about the same pace. I may follow your lead @winemaker81 and do a starter for when I add the chaptalization pack. It...

WineXpert Slow Fermentation with Dessert Wine

That's where I'm a little nervous. I haven't added the chaptalization pack yet. I'm afraid that after adding that it's going to just stop. I'm right at 1.020 now, dropped .004 since yesterday. It's just going very slowly, I hope it doesn't get stuck.

WineXpert Slow Fermentation with Dessert Wine

I started one of the Winexpert Apres dessert wine, Chocolate Raspberry. I may have done a bad thing. I didn't realize that there were two packets of EC-1118, they were packed separately and I didn't think to look for two when I went to pitch the yeast, so only one packet got pitched. I...

    New Michigan Winemaker!

For those who like hard cider this is a great state for apples. Unfortunately I'm not one of those. There are occasionally some that I find okay, but not enough for me to spend the time fermenting.

    New Michigan Winemaker!

I know right??!? Brew days were long. I was able to get them down to 4-6 hours depending on how efficient I could make everything. My first wine I was left thinking; that’s it?? It was refreshing. I just racked my first wine into secondary. Smelled great, and I took a little taste. I was...

    New Michigan Winemaker!

I actually just bought one today, I got the Forte Pinot Noir. Their having a sale this week to celebrate their 1 year anniversary. 35% off plus 10% off for life. I'm excited about doing this one. I've been reading the threads on their kits and everyone seems to be really liking them.

    New Michigan Winemaker!

LOL, I know right. Sure sign someone's from Michigan when they hold up their hand to show you where they live. I'm in the Fenton area which is about halfway between Detroit and Flint.

    New Michigan Winemaker!

I wish it were as simple as sensitivity. I can still drink beer as it doesn't bother me but I've been diagnosed with Hashimoto's ... gluten is really bad for that, and of course organic malt still has plenty of gluten. I'll feel a little better about all this once I can start enjoying the wine...

    New Michigan Winemaker!

Hi everyone. New to wine making, not to Michigan ;) and I'm enjoying reading many of the posts on here. Everyone seems very helpful. I've been brewing beer for some time now but can no longer drink it due to gluten issues. (Not thrilled about gluten free beer). Hoping a lot of that knowledge...
