    Good point cmason1957, but I suspect that cooking the juice has more of an impact. Although, stressing the yeast is said to lend 'off' flavors, so I would like to see where this goes!

    The good thing about making fruit wines, is that they are 'early drinkers'. The first few wines you make will go quickly! Eventually you WILL have enough 'going' to keep up with demand (hopefully). I have 3 - 5 gallon reds (various) going, a 5 gallon Chardonnay, and 2 - 3 gallon fruit wines...

    Other If you had one yeast for bold reds

    I have had good experiences with RC-212 (and is what FWK may ship), I have none with BM-4X4 however. Those nutrients are probably good, but I just use the standard powder Yeast Nutrient.

    I don't usually drink my wine 'bone dry', so I will add sugar to my liking. These Finer Wine kits seem to have been formulated to end fermentation at the correct time, allowing the sg to be right where it is supposed to be.     I use sorbate (or the kit packet), I have not noticed any off flavors. I have not tried it without it either, but I'll stick to safety, I guess my palate is not as refined as yours! I mean, I could try it 'head to head', but that's a lot of work for what I see as minimal possible gain, but...

    I am doing a FWK ZIn. and it finished at .999, and is aging in 2 - 3 gal. BB's. When I transfer, it will go to 5 gal. Did you put the sorbate in yet? If not, you could warm it up, and see if it drops that couple of points, but just a 'bit' sweeter, not much.

    I can't wait for these to be aged! I have Tavolta: Red Zin., Bordeaux, and Chardonnay going. I also have a Forte Super Tuscan on ice. I sampled the Zin. immediately after fermentation, and was nodding my head!

    I have several 3L carboys that I want to rack a 3gallon batch into. They have pot-meta in them to sanitize (standard). Can I rack wine into them for aging, skipping the camden addition?

    Look for a wholesale freezer outlet selling grocery or some other items, they may let you keep them in a corner somewhere, if they know that it is a 1-off deal, and you won't be asking them ALL the time. Offer to bring them some wine when it's done!

    Newbie apple cider mead

    (Late) Thanks, I have been doing kit wines for a bit, but a year wait gnaws at me, and I was looking at the jars of honey waiting! So I'm getting that clover would be for, like a cyser or pyment, but the others would be more for naked meads (there are always exceptions though).

    Yeah, I never realized that I never finished this thread. The juice they sent me was WAY short, only 1.060 -1.055 was achieved. I added sugar and the resulting wine was thin and disappointing. Goodbye Wilde Grapes, see ya!

    Keep it fun. When I started, I kept it to '100% Juice' store bought (read Juicy Juice)! You have experience, so make it easy, no risk. Have fun with it! Find one that has 'Apple Juice' lowest on the list.
