    The Chardonnay was racked from the barrel and a conservative .75 grams per gallon of bentonite applied. I’ll give it a week or so and then rack.

    If I have a white moldy layer on top of wine is there anything I can do?

    Search flowers of wine. Try to remove from the surface. Spray a strong SO2 solution on top. Then rack, SO2 and fill to the top of the container.

    I‘m doing a bentonite trial On the Chardonnay. Pulled a bottles worth from the barrel and did a .6 grams per gallon bentonite addition. Here are the results in under 24 hrs. I’ll wait a week and taste, but I’m liking what I see.
