Personally, I always keep the bucket up in the kitchen for the first 10 or so days and then once in the carboy I move downstairs to the bar to sit and rest for a couple of months. This keeps it in the 70-76 degree range before lowering into the upper 60's. Although in Atlanta in the summer...
I have had great wines with filtering and great wines without filtering. Most recent was from local home brew, fresh Merlot. 6 months in carboy. BOY what a wine!!! Wish I had not given away those 4 bottles!!!
The thing about the gasgetter is you also need to have a compressor. For the $ for the gasgetter itself you can typically find a used pump on e-bay. I paid $45 for mine with $15 for shipping. If you already have a compressor then you will just need to look at specs for gasgetter and the HP...
I have had a couple that were a little 'fizzy'. Just open the bottle 30 mins before you want to drink it. Give the wine a stir using a circular rotation from the neck. If still bubbly in the glass give it a good stir in the glass.
No, you don't use the gasgetter with the aspirator. The aspirator is a vacuum and is used to pull a slight vacuum on the top of the carboy. This will cause the bubbles (CO2) in the wine to come to the top and be evacuated.The GasGetter uses compressed air to create a vacuum.
