    What's for Dinner?

This past summer a dead tree on our property fruited the most amazing Laetiporus sulphureus - also known as Chicken of the Woods. It freezes beautifully for enjoying all year long. One of the appetizers I made for Thanksgiving was a Korean style fried chicken of the woods. The crust was super...

Corona Virus & Day to Day

No fight. Good discussion! Our number of cases have been very low until recently. After 32 weeks, our number of cases started rising exponentially. However, that does have some variability depending on how testing is done. Our test positivity rates also have been rising to very high numbers...

Corona Virus & Day to Day

So, I have been tracking the data on weekly number of deaths due to ALL CAUSES. This number in the US and even in a small state like North Dakota generally varies very little. The total deaths each week is pretty constant year after year and fluctuates slightly higher during the winter months...

Corona Virus & Day to Day

North Dakota has now achieved the status of the highest mortality rate per capita in the world. *sigh. Freedumb.

    What's for Dinner?

Just a simple Chana Masala, but molded on top of mashed potatoes and you'd think you were in a five star restaurant!

Corona Virus & Day to Day

I can't believe that just a couple weeks ago when I thought things were bad, they were just beginning. Our hospitalizations have almost doubled, deaths have been increasing, our new cases are skyrocketing and North Dakota is essentially the highest per capita cases and deaths in the world right...

    What's for Dinner?

The other day I was staring at my big jar of homemade sauerkraut trying to think of something new to do with it. I started searching for kraut recipes and stumbled upon a Bavarian favorite called krautkrapfen. Basically it is a strudel (noodle dough) stuffed and wrapped with sauerkraut and...

    added too much sorbate!

Yes, it is mainly about the flavor. Have you tasted the wine? It may be ok. You want to make sure you maintain your SO2 levels so MLF does not spontaneously occur. The ML bacteria could turn your sorbate into geraniol. That would produce a geranium taste and smell that will ruin your wine.

    What's for Dinner?

Some Asian fusion healthy food. First up, mantou. Chinese steamed buns with a butternut squash dough. Main course, a spaghetti squash ramen in a creamy peanut broth. The squash noodles were the perfect texture.

Corona Virus & Day to Day

So, North Dakota has been in a very bad spot for a while now. A couple weeks ago our cases per 100,000 were the highest in the world. Our hospitals are full and the White House even sent Dr. Brix over last week to slap our governor and said Bismarck was the worst place she had seen for safety...

If adding sugar to cider is it still cider or wine

Wine. FYI - The TTB considers any cider to be "wine". Cideries need to be licensed as a winery in order to operate.

    2,4-D the struggle is real.

I’ve been hit at least four times this year. I filed a complaint but there’s really nothing that can be done. The state pretends to care but the laws certainly favor the big ag.

Corona Virus & Day to Day

My guess is that drugs that activate T-cell responses will be an important part of the solution.

Corona Virus & Day to Day

Many states, including mine, are living by the Percent Positive rate. Our state has been reporting this as quite low, between 1-2%. But they are likely fudging the numbers. They calculate based on total original positive cases, but it seems the total number of tests value they divide by includes...

Corona Virus & Day to Day

Rocking my mask. On a sad note, with the cases spiking here in ND and elsewhere, we have decided to cancel our big “Maker’s Market” festival in August. This is our biggest event of the year. I don’t think the folks who refuse to take this seriously understand the impact they are causing on small...
