    It's exactly like you would expect from a Michael David wine - rich with over the top fruit. Personally, I prefer a more reserved old world style red with subtle fruit, tobacco and leather. But this is nicely balanced with plenty of fruit and jammyness.

    No problem at all. If you wait several weeks or longer, I would double check the SO2 levels before bottling. The sorbate should be fine.

    No worries at all. You don't want any fruit on it, so all buds are good. There will be no fruit for this year (*and next) that you have to worry about buds not fruiting or taking energy away.

    FYI . . . on the good news front, the number of deaths reported in the US has dropped to levels we haven't seen since before April 1. While new infections per day continue on a flat trend and active cases is still slowly rising, lives are being saved.

    I've been working on my ramen making skills. Getting the noodles right takes some practice, but I'm getting there. It requires an alkaline noodle that is very low in hydration and difficult to work with. I made a mushroom shoyu broth flavored with sesame. It was quite satisfying.
