The best homemade wine ever tasted

Yes, from frozen must purchased through Wine Grapes Direct. I picked the buckets up from the freezer (Portland) on the morning of December 31, 2021. On January 2nd, I pitched the yeast - Harmony by Ch. Hansen. As far as Washington Cab, I can't find anyone willing to sell me Cab Sauv from...

Minimum fill of 80L bladder press

I have a 80L bladder press. Your estimates are spot on. The minimum I have used is 400 pounds of grapes, which is approximately 40 gallons of must. It's not quite full and I can easily lift the cage off while keeping the pomace cake intact. The most I've done is 600 pounds, or 60 gallons of...

    MLF with Chardonnay: Need advice

Don't get nervous. There's enough CO2 dissipating during the MLF (and after completion) the wine is protected. Add to the fact that you're sufficiently topped up is very convincing. Again, you're in tremendous shape...

    MLF with Chardonnay: Need advice

Rylan, Just be patient. Your Carboy is topped up and just let MLF complete - even if it takes a few to several months. I have lots of experience with this Chard from WGD - it takes about a year for all the phenols and wine aspects to balance. I think you're in a good shape.

    Merry Christmas!

Isaiah 9:6 For unto us a child is born, unto us a son is given: and the government shall be upon his shoulder: and his name shall be called Wonderful, Counsellor, The mighty God, The everlasting Father, The Prince of Peace. Praying you have a wonderful Christmas today!! Enjoy your family and...

    Is my must oxidized??

What MLB are you planning for? The best I've found to accomplish your creamy/diacetyl goal is Enoferm Beta. You can find it here: Enoferm Beta2.5 hL For your volume, any MLB is going to be pricey per bottle. Your bright and fruity goal will naturally happen. Your early finished wine will...

    Is my must oxidized??

I’ve gotten Chardonnay from WGD many times. I don’t believe the must is oxidized, but rather a high degree of TDS (total dissolved solids) which aid in the flavor development. Pitch yeast asap. Your finished wine will be rather clear with time not bentonite.

Time lag for bottling after backsweetening?

I 100% agree with @NorCal - I've shouldered my share of disappointment having bottled too early. To quantify "too early", bottling anything that hasn't had at least 18 months of bulk shelf time after fermentation has completed. By waiting, you'll have still and clear wine...

Please help me understand what I bought. 4 head bottle filler

For me, the reservoir is full after 100 bottles. I empty the reservoir into a pitcher and bottle that wine too using a small funnel. Glad your new bottler works like a charm!

Please help me understand what I bought. 4 head bottle filler

Yes, it looks like an older style, or one built on the style, Enolmaster. Yes, you will need to replace the float if it is broken. It needs to hang loosely to create the seal necessary to provide vacuum. There's a little pink/tan silicone O-ring that sits between the ribbed lid and the...

My 2023 experience with Chr. Hansen CH16 bacteria

You asked, “Did the mlb add flavor or just yield a good clean ferment?” Great question. Last year, I had some ‘22 Carménère and did a little experiment whereas I added CH16 to 1/2 the batch and Oenos to the other 1/2. To this day, they remain very different wines as verified by @NorCal...

My 2023 experience with Chr. Hansen CH16 bacteria

BarrelMonkey, When did you pitch the bacteria? My experience is that it takes much longer to complete post ferment. Funny circumstance on this particular bacteria. When I first ordered it and it arrived, I gave Mrs. Crushday instructions to open the shipping box and the icepack and put the...

My 2023 experience with Chr. Hansen CH16 bacteria

Good morning, Winemakers! I thought I would pass on the experience I recently had with CH16 malolactic bacteria. For you who use CH16, you know that the smallest package (1.5 g) of bacteria is enough for 66 gallons of finished wine. Of course, this quantity represents more than we need for...
