Wow, they have invented new math. Squeeze the following Red Mountain Trio blend into 100%. 65% Cabernet; 35% Syrah and 15% Merlot. Regardless, it sounds GREAT.

I use the double handled Potrugese corker as well and find the same problem with some bottles. I think the ridgearound the neck of bottles is not uniform in locationand some corks will simply not insert far enough. I try to toss those bottles when I open them much later.

Icold stabilize at about 32-35F for 14 days. I normally use vodka but don't worry about a few drops getting into the wine.

I also keep an Excel spreadsheet documenting each step with temp and SG recorded. I insert end of fermentation date and let thespreadsheet calculate age for me.

Just general tasting notes my wife and I makedescribing tannins, flavors, aroma, finish, level of oak. I like to read the kit description and see if we agree with their description. Sometimes yes, sometimes ????
