    Will French and America oak end up at a comparable flavor profile assuming you taste regularly to account for the extra punch from American oak? The vanilla is what I am primarily curious about. Is French more prone to give the vanilla flavors or are they similar?

    Reference Chart?

    I would be curious to hear how often the members here deviate from the yeast supplied with kits. I have never used anything beyondwhat was supplied in the kit. I realize thatthis would invalidate the kit warranty.

    kits gone bad - boo hoo!

    I guess the reallesson learned is that wine makers shouldn'tmove. Just too much trouble to cart around kits in waiting like yours or carboys full of bulk aging wine. Wine before job???? Something's wrong with my priorities I think.

    If this is a hand pump brake bleeder I wouldn't do it either. I used one just for degassing and believe me your hand will be tired before finished. When mine broke I switched to a vacuum pump.

    Do you add K meta to airlock when bulk aging?

    Definitely added line of protection. Water has nothing to keep bacteria, etc from growing. Some will use Vodka, especially for cold stabilizing to keep from freezing plus kill the bacteria.
