Thanks for the suggestion. Will check 'em out. Don't have the time this summer to do a tour of the Finger Lakes.

    proposed all fruit Blackberry mead

Apologies. I read what you wrote quite literally: you said to use the same volume of juice as honey. But if the recipe was calling out for more juice than the 2 quarts that wasn't very clear. But apologies if I misread your post. I am nothing if not a literalist AND a contrarian.

THAT sounds like a recipe for a disaster. Three pounds of honey = 1 qt. So, two quarts of honey = 6 lbs. To make one gallon of cyser, you would then need to add 2 quarts of apple juice. So, what we have is 2 qts of liquid at 1.050 (plus or minus) and 2 qts of honey with an SG of 1. 210 but wait...

Trying Again but Confused by Kit Instructions

Refractometers, I have found are accurate BUT they are accurate for reading juice or must and not a minute after you have pitched yeast. They are calibrated to measure the refraction (bending) of light as it passes through water with salt or sugar in solution. Alcohol bends light at a different...

    proposed all fruit Blackberry mead

What is the sugar content of blackberries? My research suggests they have a brix of around 10 (so a gravity of about 1.040). Thirty pounds suggests close to 3 gallons , so the SG of the juice will be 1.040. Six pounds of honey (half a gallon) will have a gravity of 1.070 when diluted with water...

    People leaving the hobby?

I wonder if some people who are getting rid of equipment jumped into wine making with both feet before they had made a gallon of wine and then discovered after buying a kit that they had no patience for this hobby or they had no idea how to follow instructions without adding their own creative...

explaining the problem was easy. No effort. took all of one minute. Trying to twist the template into a usable doc took me about 15 minutes and that is not time I can afford to waste.

    Pushing the in

How was the yeast stored before you bought it? Are you certain that the yeast was kept under good conditions and not, for example, exposed to too high an abient temperature. That might damage many of the cells even if it did not destroy them all, so your colony might begin as one that was very...

Act now to pass the USPS Shipping Equity Act

I often write to Paul Tonko... but the set up does not allow me to do so... and I really have no time to deal with set ups that are not well designed. Move-on does not have such programming problems. Those with too much time on their hands can send a message thataway. Sorry. technology serves...

    Red Hybrid Color Stabilization

Look at the color of the wines that most folk who make strawberry wine end up with. Strawberry blond/e is what they often get. And I would argue that the solution to preventing a loss of color is a) more acidity in the must (strawberries are not very acidic -pH wise) and tannin. the addition of...

    PH, TA and Brix

Not so sure I agree. Most dessert fruit has around a pound of fermentable sugar in every gallon of juice. (1.045 - 1.055) BUT when wine makers use about 3 lbs of fruit the amount of available sugar is negligible. You are adding two pounds (more or less to hit 1.090. Can't speak so much to the...
