    What's in your glass tonight?

Here’s what I’ve been drinking all month. I was putting on too much fat so I swore off my two favorite foods. Wine and peanut butter sandwiches, not together, so far just cutting out those two items I’ve lost 8 lbs. it’s been a long month, can’t wait for April.

    The 2024 crop year

I was getting a bit concerned as well , with my south facing hillside vineyard I was afraid the soil would warm up enough to start bud swelling, but now it looks like below freezing at night as usual so all should be well.

    Result of using bourbon barrel

I have two 10 gallon Hungarian oak barrels that I age wine for 12 months in and there isn’t a lot of oak imparted. I’ve actually started adding American oak to the barrels to get more flavor. As for my bourbon barrel, I took it apart and bandsawed off the heavy char and cleaned it up. Right now...

As soon as I put up my last sheet on a project I sold my lift to make sure I would never do it again.

I might be drinking too much, erm...

I would think you’re drinking too much. I know I wrestle with the same problem because it seems so benign, how can drinking wine in the evening be bad? My wine is generally around 12% so I feel I can drink a bit more, but usually stick to about 375 ml per day, I’m more worried about my liver. My...

Did I Screw Up? - First Year Winter Pruning

I think this year I’m going to try to get suckers from the roots to grow like new plants. If they are successful I should be able to replace my older misshapen trunks in 2 years. I wonder if I need to cut them back like a new vine or not.

Did I Screw Up? - First Year Winter Pruning

I recently pruned my itasca back to 3 or 4 buds because it’s the right thing to do, but it sure seemed counter intuitive. It was kind of painful.

Less is more? Your approach to wine making?

I grow Marquette grapes and try to make my wine in the vineyard. I have thin soil (12”) on top of hardpacked sand. I try hard to fertilize and water and leaf pull etc. I hand sort all my clusters while they hang so when I harvest I don’t have to sort again, so I don’t add so2 at crush. The...

    2024, What are your plans?

Along with my Marquette , I plan on harvesting enough Itasca for six gallons or so. Hopefully I’ll have enough Marquette to sell. If weather is kind I would like to pick blueberries for six gallons also.

Ascorbic acid removal from finished wine

Weird. I had a neighbor and a sister-in-law who both had hit the back of their really hard and they completely lost their sense of smell.

First Check of Last Year's Wine

Chalk it up to experience and move on. I had to dump my 2020 vintage and my 2021 vintage is too acidic to enjoy. At 12 Brix I wouldn’t have tried to make wine. How old are your vines?

    Result of using bourbon barrel

I’ll keep that in mind. My wife’s cousin lives in Boerne, we visited a few years ago , really nice area. Found a great place for rough sawn mesquite lumber.

    Taming Tannins

Gelatin reduces tannins very well with little affect on flavor. Of course time is the best way to mellow tannin.
