    How to prepare grapes

If you are going to do a second wine, you need to greatly lower your expectations. It will be flat, and very thin on flavor. I used to do this in my early days. In the end, I found it not worth tying up car boy on a second wine when I could get more grapes and make more of the good stuff...

    2024 crush

One thing I did learn in France is they put WAY more importance on where the grapes are grown rather than how the wine is made. A US winery will tell you the variety of grape, and in what and how long it was aged. A French winery will tell you the variety of grape and the type of soil it was...

    Hello everybody.

Hello folks, I know it has been a while since my last post, but I have some time now. Been doing the retired thing in an area where new wineries are opening every year! Got to know many of the owners and have been spending a lot of time talking wine. On top of the 30 or 40 wineries in our...

    Moving Lots of Must

I have built a frame that allows my crusher/destemmer to sit right over my primary fermenter. For 225 pounds, you are only taking about 6+ trips. In other words... bring the crusher to the primary.

    Dang! Was anyone hurt???

    Fermentation tanks

Tip on cleaning ss tanks.. Get a two wheeled hand truck. Move tank outside and tilt on its side. The hand truck will serve to cradle the tank. Let the sludge pour out. I then use a cheap electric pressure washer to blast the inside clean. Easy-peasy, lemon squeezy!

Correct way to use variable capacity wine tanks...

We use them to age for at least 12 months. We just draw a sample every 3 weeks or less.
