    Question about "oaking" or flavoring

IMHO, it is never too late to oak your wine, but this depends on the method used. If you are looking to age on oak (oak chips, cubes, beans, or staves) I like to add the oak any time after the wine has clarified after fermentation. the amount of time to let the wine sit on the oak depends on...

    Co-Fermenting Malbec and Petit Syrah

IMHO: I would scrap the malbec and simply go with the petit syrah. Petit syrah makes a wonder wine all on its own. I can not tell you how many medals i have won with just a straight petit syrah.

    what would you charge?

Half if it turns out good, just one bottle if it turns out bad

Why is a good sparkling wine more difficult?

As others have said, I have used the "methode champenoise" (priming with yeast/sugar, riddling, and then disgorging) and i have to say that forced carbonation is WAY easier, faster, and cleaner. By simply placing your clear wine into a clean cornelius keg, pumping it up to about 35 psi with...

I placed my order with Corrados weeks in advance. they told me no problem and would hold the stock in reserve for me. when i came to pick up, they had non of what i ordered abd i was lucky the he at least had some petit verdot available. Amazing just how empty the warehouse was!

Tragic Story -- Adequate Ventilation Fermenting Large Batches

CO2 is heavier than air. Most of the time, when deaths occur, a worker will pass out from the CO2, and then is laying on the floor where the CO2 concentration is even higher. There are times, during punch down, that I had felt sweaty and also dizzy. Since then, I make it a point to first...

So, how did crush go for me?

This year's crush was odd to say the least. As you all may already know, I have retired to the mountains of Georgia. The wife and I simply love it here. We have waterfront property, beautiful mountain views in every direction, and tax that is 1/6 of what we were paying in NJ. Our quality...

    My Riddling Rack is Done!!!

Nice. you'll be breaking out the bubbly in no time. Question, After riddling, how do you plan on disgorging? Are you going to freeze the neck? if so, how?

    screwed up this year

OK, so the baking soda is an alkali (base) the reacted with the acid in your must to produce gas and most likely some form of salt. You should have splash racked the must instead. All is not lost though. I would advise that you test you acid and adjust the PH accordingly. If your acid...

    Weirdest Crush EVER!

Indeed. The pv came in at 26% sugar and a ta of .375. In other words, they were overly ripe.

    Weirdest Crush EVER!

This year marks my 35th crush and you would have thought that I would know it all by now, that I had a plan for every contingency. I can tell you that this is simply not the case. Our crush was on 10/2 and I had put my grape order in two weeks prior. When I showed up with my truck to pick...

been busy (in a good way)

So now that the month of August is over, I ran my numbers for winetasting... Total cost of the wine highway passport was $75. Had I not had the passport, and simply purchased the tastings, I would have spent $201.00! Got my money's worth out of it! I visited a total of 17 different wineries...

    fruit flies over ripe fruit.

Fruit flies are known carriers of acetobacter, but it is still worth a try. I would give a heafty dose of k-meta at crush, then wait 24 hours before pitching your yeast.

    Help figuring potential alcohol

Brix multiplied by 0.6 I get 13.02. Admittedly, using the SG calc is probably more accurate, by mine is easier to do in your head.

Why not simply build your own? although it is made out of wood, I gave it 4 coats of food grade polyurethane. several years old now, but still looks new.

been busy (in a good way)

Hi folks. been a long time since my last post. Let me get you all caught up. I have now been retired for over 3 years and I have never been so active. We are in the process of moving from NJ to the beautiful mountains of Georgia. We are currently in the process of getting our NJ home ready...
