    Secondary fermentation

If your so2 and acid levels are where they should be, o2 at racking is only a minor concern. Agree with sg. I depends on how much water you add. Still, I would top off with wine just the same.

    What's for Dinner?

Hope everybody was well fed this holiday season... Here is a summary of what I made.. Christmas eve was just NY strip steak, baked potatoes, string beans, and sauteed mushrooms. For Christmas it was roasted stuffed turkey, mash, brazed carrots, gravy, string bean casserole, cranberry sauce...

    RIP, Dawn Wells

A standard question between guys is.... Ginger or Mary Ann. I was always a Mary Ann guy. I think this is why I ate so much coconut cream pie in the late 60s.

    Timing of racking

As far as racking, i like to rack when there is a distinct layer of sediment, usually 1 week after pressing. In other words, i like to get rid of the gross lees just as soon a possible. I also rack again a month or so later, once the wine clarifies.

    Secondary fermentation

Like others have said, leave some room until fermentation is complete. When topping off, remember the 100 rules... 1) never use water 2) never use water 3) never use water 4 never use water..... {you get the idea} water will only throw off your PH and dilute the wine. If you need something...

    SOME PEOPLE

We (wife and i) had two choices, Stay in NJ or in the GA mountains. In our NJ county, they are reporting over 200-300 new cases per DAY. THis is not surprising since NJ is the most densely populated state. Restaurants are only allowed 25% capacity which is tough being that it is now too...

    Best starter kit

I have this neighbor that approached me and wanted me to teach his wife how to make wine. Knowing they had no equipment to start with, or any kind of space to work in, i suggested that they try to do a kit. My thinking was that they could then try winemaking without a huge investment (in case...

Four score and seven years ago...

two more points.. at the time, tax on alcohol represented 1/3 of all government revenue. some thought that this would make prohibition impossible. Unfortunately, the nation's first income tax was passed to help cover the costs of the war. in the end, this made alcohol revenue less important...

OK, So the amendment mentions "intoxicating" beverages, but no definition was made of what exactly was an intoxicating beverage. Many felt that beer and wine would be allowed and that hard liquor would not. it was not until the volstead act was passed (9 months after the amendment was...

Problem with VA during MLF ?

SB is typically a high acid varietal, but it seems that yours tested low. Questions: can you tell us the total volume of wine and the total weight (or volume in teaspoons) of tartaric you added. Also, how old was your ta test kit? if I look at you PH, you were just slightly low, if not even...

Actually, making wine and beer at home (for personal consumption) was always legal (even during prohibition. There is a great multi-part series on the prohibition on prime.
