I added the cubes that came with the Zin to ours, and I'll likely add more at the next racking and possibly the next two if it's not where I like it. Did the Merlot come with any oak? If not, I'd definitely add the spiral.

I have a Zin going, with two grape packs. On a Pinot, I would dial that back to one or none.

Having made both within the past several years, I think you may have lucked out. French Cab kits from RJS have been nothing less than stellar, whereas the Nero D'Avola offerings have been a bit less excellent/consistent.
