    Your experience may be better, but I had a batch of bad SA pinotage so that's one I tend to avoid. I would do Australian shiraz, chilean malbec, and SA sauvignon blanc. For the reds, I'd add some skins or whole grapes to add complexity.

    Taste the wine to figure that out - that's something that's depending on how oaky you like it to taste.

    Hi @jmadera83, the process is to ferment all the way, then add k-meta and k-sorbate, then you can add sugar to sweeten.

    Fine lees is okay to have without racking. Gross lees, thick sludge from fermentation, is what I rack off of. I bulk age and don't rack, just add k-meta every three months, then rack for bottling.
