    @BigDaveK I'm curious as to whether your coffee wine will benefit from oak. I did coffee port as a kit a few times, added heavy toast oak, and fortified with brandy, and it turned out awesome.

    I'd degas again to see if that helps. That's happened to me in the past that a wine won't clear and gas was the culprit.

    You can bulk-age at room temperature, bottle, and move to the cellar at that point. That is what I do.

    A lovely pale pink rose that contains 55% merlot, 20% syrah, 15% cabernet franc, and 15% tannat from SW France.
