Anyone making 100% Norton wine here?

"He actually goes into detail about the Norton winemaking process. And he points out the unfermentable polysaccarides in Norton that I assume will affect Brix measurements." Are you referring to his book or information from him found in other places?

    SP not clearing

Would there be any harm using sparklloid next time, after using kieselsol/chitosan? Will give it a week then decide. It's at about 72 degrees, will be easy to increase temp a little, might be more difficult to get to 85.

    SP not clearing

I stirred it vigorously prior to adding the K/C, but thought the same thing. That’s why I racked with the vacuum pump. I added the pectinase this morning. How long should I wait before considering re-adding the kieselol/chitosan?

    SP not clearing

I forgot to ask. I don't see pectin enzyme in the original recipe and did not use any but was wondering if it would benefit from adding some.

    SP not clearing

Third time I have made skeeter pee, the first two I used sparklloid. This time I tried to use kieselsol/chitosan with poor results. 9/28 started, using standard recipe. 10/9 SG was 0.994, degassed, added K Meta/K Sorb and kieselsol/chitosan all within about three hours. 10/19 still cloudy...

    aronia (chokeberry) stuck fermentation

I can do this! Will add nutrient, rack and leave it alone for the next 2-3 months. Do you always add nutrient? Other than Goferm I have only added it if the yeast has high nutrient requirements, or it was included in a kit.

    another newbie grape growing question

Extension agent said this is angular leaf scorch. To me it doesn't look that much like pictures posted on the internet, but I am sure I know less than pretty much anybody. He recommended that I treat with anti fungal which can't hurt and something I probably should have done as soon as I...

    another newbie grape growing question

Couple of weeks ago I found a few leaves that looked like this and pretty much ignored them, they were on the trunk. Clipped them off and disposed them. Now they seem to be progressing upward and have found a couple on the cordons. Several vines are affected. Other leaves and the plant appear...

Any update? Did the oak help the astringency?

    help identifying this egg packet

I have found several of these on my grape leaves in the last week, other than a couple of leaf rollers, I haven't found any numerous insect pest. (Japanese beetles have been a problem but seem to be decreasing recently). I have manually destroyed the ones I found but then thought it would be...

    Blackberry juice only?

Thanks, probably both, but definitely limited on available freezer space. I checked two batches and TA was over 1% in both, did not bother to determine actual level since I am not ready to start. I don't mind t a little sweetness but don't want an overly sweet wine. So far I have picked over...

    Blackberry juice only?

I have had a bumper crop of blackberries this year and in order to save space I have been freezing them for 24+ hours then thawing/pressing them and refreezing the juice. When I have made blackberry wine before I used whole crushed berries, If I make wine do I need any seeds/skins? What would...
