How to correct low pH and TA

How to correct low pH and TA

Thanks all. I was under the impression that I wanted pH 3.4-3.6. I've been reading a lot, maybe not enough!

How to correct low pH and TA

Picking up CS next week. Vineyard data shows Brix 25.1, Acid 0.46, pH 3.26. If my readings are similar, is it possible to raise both? If not, what would be your focus?

    In praise of red blends

Master Vintner Weekday Wine 5 Gal + black zante currants. I read about adding currants but didn't look close enough so I figured 1.5 pounds would be a good amount! SG 1.114. 16.5% ABV 2 week EM Bulk aged 8 months with oak balls

    In praise of red blends

I bottled a cheap kit on Monday, "weekday Merlot". Ended up with a half bottle for angels share. But it tasted so bland and flabby, I knew my wife would complain. So I opened a $12 screwtop bottle of acidic hootch, also undrinkable on its own, and blended them. Wife was impressed, "You're...

RJ Spagnols RJS En Primeur Winery Series - Italian Super Tuscan

I started this kit last November. It was my second kit ever. Other than bulk aging I followed directions. Bottled yesterday. Wife approves, it's very drinkable.

    Barrel Monkey Barrels Down

Very nice! Curious about your press. You're able to borrow all this industrial equipment until press time, then you go all home-winemaker on us. What do they use at the winery?

    Wild Blackberry Wine

We only have the tall ones, 8-10 feet, which you helped me identify as Himalayan. It is indeed labor intensive, and we know no shortcuts. My wife picked them all. A gallon ziplock holds about 7 pounds and each one takes about 2 hours to fill. So a considerable part of her summer went into that...

@Raptor99 how was your harvest? I pulled mine out of the freezer yesterday, 124 pounds.

    Crush day at Crushday's...

That is sad. And kind of scary. Even on a level floor it would seem that if the wheels aren't positioned right a full brute may be too heavy for the dolly.

    What's in your glass tonight?

I haven't seen many tequila drinkers on this forum, but I had to post this as I was quite impressed!

    2021, what are your plans?

I will be picking up cab in eastern Washington for $1.45. I believe I'm paying a bit of a premium due to it being a minimum order. It's a 3+ hour drive but there's something romantic about personally seeing the source vineyard. I have also hit up a couple local wineries who agreed to sell me...

    Wild Blackberry Wine

Actually, she went 6 hours and now has 50 pounds. And a lot of stains on her skin and clothing! I freeze as well. But when you say 5 pounds per G, is that all juice? Last year it took me 10 pounds to get a gallon of juice.

    Wild Blackberry Wine

One thing I might add about these blackberries. While the berries themselves are quite delicious as is, the juice is pretty sour and needs considerable sweetening. Having no experience with country wines, I'm not sure if this is typical. Wife picked 25 pounds this morning and harvest is just...

Apparently mine are himalayan too, judging by the telltale pentagonal stalk. I think you will be pleased with the flavor.
