    Substitute for Star-San?

I'd look for a local brew store. Surely there must be a couple in your neck of the woods. If not, order from another on-line brew store like Northern Brewer. Here's a link to their Star-San: Star San by Five Star And what Bryan just said!

    Substitute for Star-San?

Can't ship to you???? Are you not w/i the US? Kmeta will work but will take a little longer contact time and you may want to rinse depending on application although not really necessary.

    How to identify UK Elderberries

Interesting. The berries of the Sambucus nigra we have in NC are dark purple when ripe and stain like crazy. I made a very nice Chianti-style wine from them in years past. I opened a bottle earlier this year and it continues to improve. I also made an elderflower wine in cooperation with...

    How to identify UK Elderberries

Have never seen a cream colored elderberry. Proceed with extreme caution until positive ID is confirmed. There's plenty of good advice here when you post pictures.

Post a Meme, any Meme! (no politics)

Yep, born and bred in NC so I've heard a lot country pronunciations and love to "spoof" our Northern folks who move in such as "puttin' your groceries in a poke". A new neighbor asked me not long ago if I had lived here all my life. "Not yet but I'm gettin' close" I responded. I've spent a...

    Cleaning wine bottles

I'm with cmason; however, I found that 2 TBS of water in the bottle and into the microwave in a horzontial position for 1 min on high and the labels slip right off 99.9% of the time. Always use an oven mitt to remove the bottle. Don't ask how I know this! BTWm most commercial wineries don't...

Question about vacuum pump and "Big Mouth Bubbler"

I did a lot of research in preparation for vacuum transfer from a primary into a 54 l demi. I did not find a single example of implosion on any carboys that were free of preexisting defects. I did multiple tests with water using 1/2" tubing as Steve suggested and encountered no problems...

Dave, Noticed your wood pile and thought I'd pass along another method that you may not be familiar with. I started stacking my firewood in the Holz Hausen style years ago and found that the wood dries faster and stack(s) are more stable AND it looks pretty good to boot! I use pallets on the...

My feelings exactly! Getting older is mandatory; growing up is totally optional!

    Passionflower wine?

Yep about the size of a small chicken egg and yes they were Maypops and not traditional passion fruit. You're right, there's not a lot to the pulp (seed sacks) so it will take many "pops" for a batch of wine. You could probably scrape out the seed sacks, and freeze until you have enough for...

    Passionflower wine?

Might want to consider the juice filled seed clusters in the fruit and not the entire pod. We used to eat the inside of the pods kinda like a pomegranate when I was a kid. Of course, when I was kid, the Dead Sea wasn't even sick!!!!

Why are there Cokes and Pepsis in the photos above? Don't you know those are loaded with aspartame? AND they're not even fermented!!! 🤣

    Piquette wine tips?

I make a piquette each year from my muscadine "hulls". I simply return them to the primary after pressing, add 5 gals of water and adjust S/G to 1.090. I seldom have to add additional yeast. Follow your original recipe from that point forward. Your resulting wine should be a nice early...

Thanks for the info, I created mine in Numbers and it does the job but needs refinement.

    Elderflower wine

Looking good! Wondering about your S/G-Temp-Day chart. Is this your creation or is it a readily available template? I created mine but would like to take a look at a better model. Followed a recipe with a blind eye (that's my story and I'm stickin' with it!) and overshot the OG by miles...

Never underestimate single-celled microorganisms of the fungus kingdom!

Kicked off my first batch of elderflower wine this morning and decided to use Montrachet yeast as specified in the recipe. Rummaging around in my yeast stash I found the only packet of Montrachet I had but was surprised when I saw the date - the yeast was almost 10 yrs old!! I generally start...
