    15 Months and still hazy - Peach Wine

    I've made several batches (maybe 4-5 six gallon batches) of peach wine and clearing has always needed a second hit of Super-Kleer along with a second hit of pectin enzyme. End result has always been a haze free wine.

    I think~10 batches (6 gal/23 L) a year now keeps me at level where production approximately equals consumption and gifting.

    To cover or not to cover?

    IMHO if you don't need to stir it doesn't make a dimes worth of difference whether you cover (i.e. airlock) or not so long as you gave the must a good stir/mixing before pitching the yeast. If not airlocked you'd of course want some sort of cover to keep fruit flies and such out of the must.

    Fermented Early?

    I've never had a wine take 3-8 weeks to stop fermenting whether a kit, bucket or fruit wine. You didn't say what day you're on (5-7 as in the instructions?) but I'd just keep it locked down and check SG again at around 14 days since pitching the yeast. Love my fruit wines good luck with yours.

    Roy G Biv seen on Mills Hill Road between Shumway Hill Road and Arnot Road. This would be a bit south of RT. 6 between Wellsboro and Mansfield Pa. [My dog Sadie and I will often take early evening dirt road runs looking for critters and such.]
