Only the Tavola Bordeaux blend and the White/Blush wines are left.

Well, I was able to grab two of the Tavola Bordeaux blends. There was one Syrah available but I waited too long and it was gone by the time I selected "buy." With FWK just about completely wiped out on inventory, I guess we wait for the summer to see what comes next.

Wait!! Really??? Dang. Looks like just the Tavola Syrah, Chard, Zin and Bordeaux blends are left.

So quick question: Label Peelers is doing a bogo on their FWK kits. I was contemplating getting two of the same kit so that I would have enough to drop in to my 8 gallon barrel for six months... Here's what I already have aging in carboys: Forte Merlot, Pinot Noir, Zin and Petite Sirah...

    What's in your glass tonight?

A shame I can only hit "like" once... one of my favorites.

    What's in your glass tonight?

I like that a lot. Will try the dark syrup next time around.

I've been on an Old Fashioned kick as of late.

So I’m a little embarrassed to find there’s actually a checklist at the end of the instructions. Don’t know if they were there in the early instruction manuals, but it’s at the very end of the one that was included in the Forte Merlot. 🙄 Still, it’s literally just a checklist. I may go ahead...

I like these ideas. How about they include the one-page instruction checklist as part of the kit regardless, and just let the user uncheck the box for the detailed instruction booklet (the “first time buyer” guide)?

Completely agree. I've relooked at the checklist, fixed typos and clarified a few things. For my purposes, I prefer the checklist. Now, I did this list from my own memory and without the directions in front of my. So that definitely not what @Matteo_Lahm calls it. I know he’s answered your...

Just had a thought about the FWK instructions. The first one I got i thought it was great. Told me a lot about Matteo, how FWK came to be and gives detailed step-by-step instructions. Now that I'm on my 10th or 11th kit, I'm feeling like it's a bit of a waste. It's also not very useful to me...

Well, the Forte Merlot did not disappoint. I prepped the must last night. The initial SG came in at 1.106. Knowing it will likely finish in that mid-0.99X range, and the higher OG is likely to be attributable to something other than too much sugar, I only added a little bit more water to the...

An SG of 0.990. I can routinely get a WE kit down that far. But, the FWK kits seem to pitter out around 0.994 or so. I may be wrong, but I'm attributing that higher SG to the high concentration of dissolved solids in the FWK kits and not necessarily residual sugar.

That’s surprising. I’m counting in my head and, after 8 FWK kits, the abv is usually high, and higher for the Fortes, with a final sg a little above absolute zero.

My Forte Merlot showed up today. I have every reason to believe I’ll have a high starting gravity and finish in 0.995 range. The Tavola aren’t as high to start (typically 1.105) but they do have the same final gravity. My theory - there are a ton of dissolved solids in the liquid which...

    Sparkling Wine

I just got a soda stream and am mastering the art of carbonating my wine without blowing too much out in foam. And, it tastes pretty spectacular. So this has me thinking about ways to carbonate and bottle the wine for later. I saw a video using a pony keg, charging it with co2 and then using a...

Summertime is coming - Choose Your Vino

So I did a thing... kinda magical, actually. Over the weekend, I took a bottle of the Luna Bianca and put it through the Soda Stream (powered unit, called Fizzi One Touch I think). Granted I still need to master how much to carbonate (lost a third of the bottle in overflow). But, the results...
