According to Winemaker Magazine, sulfites do not cause headaches. There is not enough sulfites in wine to cause any discomforts concerning headaches....

red wine and has a great flavor.
You want Potassium Metabisulphite and Potassium Sorbate. Add both at same time when you back
sweeten it. Half teaspoonful of Sorbate to one gallon of wine and about one-eighth teaspoonful of
Metabisulphite to one gallon.
