    I know a guy that pokes fun of all of us at beer club meetings about our choice of sanitizer. This guy has decades old meads and is a national winner with it. He uses Cascade. I spit you knot.

    can I re-use StarSan?

    I make it up in 5 gallon buckets and it lasts for a long time if your water is good and you are careful about getting 'crap' into it. I've measured with a pH meter and it doesn't seem to go bad for months at a time. Use distilled or low mineral content water for best long term storage.

    Any appliance rated for under the counter should have a front exhaust for air circulation. (In one side and out the other) Small does not mean it is meant for under the counter. It might just be free standing.

    You can get a chest freezer that goes up to around 185 gallon capacity. You'd lose some back to spacing depending on what bin you could find to fit inside. Temperature movement would be slow.     stuck fermentation in secondary

    Your water choice should not be an issue. Did the kit say to rack at that point? I don't rack until fermentation is done with a kit. Just because yeast drops from suspension it doesn't mean it is inactive.

    Zombie thread revived. :D It is my understanding that chlorine actually damages the RO membrane so you need to change the charcoal filters regularly.

    If you look closely you may find there are only a few brands with different names on them with minor modifications to make them look different. I worked for a major manufacturer that just 'rebadged' their version. Freezers are the same. Not enough demand to justify multiple lines.

    YAN requirement for the yeast also comes into play. We may like to over think and over due our hobbies but more is not always better. I've read the reason there is a V3 of this calculator is that people were complaining of off flavors in small batches because of excessive nutrient additions...

    I think the point @cmason1957 was making is that some people that supply juice buckets add yeast so all you have to do is ferment. The place I go to stopped that practice because most people wanted to add their own yeast. They now give out packets of ec1118 with the bucket.

    Was the wine OK after you shook it? Did that taste go away? Did you decant to make sure it was fully degassed?

    How can commercial wine cost under $3 a bottle?

    I just bought 6 gallons of juice for $52. Divide by 32 bottles that I will get from these buckets equals $1.63 per bottle for the juice. Of course there are other expenses but add a little water and take bulk purchase power into account. You can also buy the grapes/juice everyone else passes...

    Juice price

    L’uva Bella has handed me a packet of the EC-1118 with each bucket. I now have it in the fridge storing and waiting for a reason to use it. I just spend the 75¢ at the local brew shop and get what I want.

    It comes refrigerated. Depending on conditions it may take 24 hours before you can pitch anyhow. That's a lot of mass to warm up and the weather is cooling. Call ahead. I know they are getting some of the Italian juices in now. This stuff is 'pre order' but there may be some stock for sale.
