    Experiment with an indigenous yeast

    You really don't know if it is yeast growing. Or at least the 'only' organism. People that hunt yeast strains will streak the concoction on a petri dish to isolate what is growing and then check the white fuzzy stuff under a microscope to make sure it is yeast.

    Just a Yeast Thought

    With beer the amount of yeast to pitch is well studied. Over pitch and the yeast will enter the anaerobic cycle too early and not produce the proper amount of esters producing less flavor. Too little and they become stressed and produce off flavors. No idea if this applies to wine.

    You will find videos on u toob of people doing expermements swapping beer and bread yeast. It works. Also, use 1/8 to 1/4 tsp of yeast and let it rise overnight. Arguably a better dough and it conserves your stash. Not to mention you could just keep a 'mother' going. ;)

    The guy that reponsible for TONSA did a new version about a year ago because people could taste the nutrients in a one gallon version. It didn't scale down well. But that's just a wild stab since we have very little information here. How warm did it get during fermentation?
