I racked off my banana 07\20 into 3 carboys and all looks good. I racked off a second batch of banana 12/20, and it did this. I’m confused as to what happened to my wine in the few minutes that it was being racked.
I plan on 10 lbs per gallon, peel , vac seal and freeze until you have enough. Add 1 gallons apple juice per 5 gallons (just to dissolve sugar in). Add plenty of pectic enzyme to aid in dissolving the fruit.
cant answer that, maybe not vinegar, but definitely bad. I assumed that there was something left (not clear enough) that allowed it to develop. Out of a 750ml bottle about 1/3 was gelatin like.
