Upgrading from kit kieselsol, chitosan, sorbate

Correctly dosed Potassium Sorbate should not be detectable. However, I do recommend Potassium Metabisulfite. "Potassium metabisulfite acts as an antioxidant with anti-microbial properties. This serves many purposes along the winemaking journey. In slang, the addition is usually referred to as...

Use for tannins in wine kits.

This is a very good post about exactly that: https://www.winemakingtalk.com/threads/tannins-know-when-and-why-to-add-them.42039/ But in the end just remember: there's no "correct" way to make wine. Experiment and find what you like best. Wine is the drink of infinite possibilities.

Upgrading from kit kieselsol, chitosan, sorbate

I have never been able to taste either. If properly dosed, most of it shouldn't remain in the wine, but will be in the sediment you leave behind. Potassium sorbate is used in winemaking to 'stabilize' a wine and prevent a renewed fermentation (especially when sweetening a wine prior to...

Zinfandel grapes -> wine! A new member's introduction via a 75L of red deliciousness.

Yes, Stephanie is my wife! Firstly, the winery is not open yet, so nothing I've made up until now can be sold even after licensing and permits are complete :( This makes opening a winery one of the most cost-forward ventures I can think of--spend all the money, submit to competitions, make wine...

I highly recommend Blichmann Engineering for fermenters/press. As long as it's in the volumes you need. Game changer imo

Data I complete forgot to mention equipment. I personally don't find that equipment really matters in making good wine. My best batches have been in protein shaker bottles... As a reminder this batch is a forum/community wine make for anyone that wants to participate, so equipment you'd have as...

Sounds like the vote is no to bentonite. Works for me!

I have a filter just in case, but I agree 💯 with all of this. I only ever use it if I get a really stubborn batch. What causes a protein haze in your whites?

It is. 😊 I would use a standard press if I had one on site. I only use vacuum press in the winery normally, so I don't have a screw or bladder press.

Both starters are looking very healthy so far. Success, I think. Time to wait! Bryan's method seems good to me so far!

I totally just prepped this backwards exactly 60 seconds after reading it......😩 Using kitchen measuring bowls, cooking thermometer, spoons, food scale, and microwave! Stuff most folks will have. Who needs flasks and stir tables anyway 😂

Of course! See attached. I had a conical that was clean and ready, so just grabbed that and Star San'd + dry time Yes, I think that's what we decided to save complexity. We'll have two batches during fermentation, then blend before press.

Decision time! Starting yeast now. I have split the batch into 1x ~ 8 gallon tank and the original 12 gallon false bottom press tank. I have the following yeast strains from recommendations here (I usually used 212, but I'm excited to try something new!): BM 4x4 Assmanshaussen RP-15 (and a...

    Bottle Rinse

Sorry for not answering your question, but this is something I've used: https://morewinepro.com/products/stainless-steel-bottle-washer.html The issue with it is that it isn't made for sanitation, it's made for rinsing only. So not really an all-in-one solution like the fast-rack system, which I...

    Bottle Rinse

How many bottles do you typically clean at a time? I've never heard of a commercial cleaning solution for 1x 750mL at a time. o_O If I needed to clean only 2 or 3 750mL bottles, I'd grab some PBW or LD Carlson's, mix it in a bucket with some trusted water source, dip, shake, dump. lol
