    In your kit instructions it will probably show you to rack in 6-8 days and then again at day 20. That is when they are suggesting your wine is now dry.You can start checking the SG about day 12 and when you go 3 consecutive days at the same you should be done ferment. Then it's time to degas...

    Why do some wines take longer?

    The kits count the racks as time. So if it says 4 weeks -that's not how long it takes to ferment but how long, or soon ,until you can bottle. My opinion is , you don't want to ferment too quickly or you lose some of the flavors. If you're fermenting quick, check your temp. it might be too high...

    E.P has my vote. Haven't made a bad one yet. If you are not sweetening I would definitely say not to use the sorbate that's included in kits. I just toss that lil additive aside (except for some of the whites that have a fruit pak that's to be added in the secondary)

    Sulphites don't stop fermentation. I wouldn't go too long without adding.Your wine will continue to ferment .I always rack my kits to secondary with metabisulfite and then let continue to ferment.

    Did you add sorbate before adding the Newman's juice? If not your yeast is now fermenting the sugars in the juice.I would just let it go dry again.It will bring the abv a little higher depending on how much juice you added at top up
