    The only other this do you have any MLB nutrients? Acti-malo and/or Opti-malo? I did my first few MLF's without nutrients and they finished fine. Just gives the process a leg up.

    You want to rack one more time off the gross lees very soon. usually 24-48 after press. Then add your MLB. There will be more lees with time but lighter this you want to stir up a few times a week during MLF. Some of us are co-inoculating MLB 24 hours after pitching yeast these days.

    I read about these non-sacc yeasts from CHR HANSEN when you mentioned them several months ago. Interesting to hear the differences are that noticeable between batches. Wish they sold these in smaller quantities.

    I had a similar experience with my PS. Ended up with 1+ gallon less than the brunello in volume after free run and press. But the PS is already tasty at several weeks old. Plus the PS skins made my nebiollo buckets just as dark.

    Hit the post reply before finished. And I read 2 slightly wrong. 8 days is not crazy long. like I said take readings the next couple of days if goes down all is good. I do my juice buckets in primary until dry then rack, if reds let MLF complete(30-90 days), rack and sulfite every 3 months...

    I have had juice buckets fermenting away when I picked them up. Usually they are around 1.070-1.080. Most juice buckets(not fermenting) I have purchased started around 1.090. So if your SG was 1.060 it was a good ways into AF. Now if the reading stays at 1.002 for 3 days than it is done...
