    Not mentioned above is that some of the kit companies use the name Chamblaise for a Chablis-style wine. I didn't see any premium kits on a quick search but Winexpert (Vintners Harvest) and Spagnols (Grand Cru) both have Chamblaise kits. However, both are blends and don't mention Chardonnay. Steve

    Personally I don't even check the sg of a kit until 5-7 days. If the sg is 1.005 or below, I rack to carboy. If it's not, I do some thinking. Steve

    I don't see anybody commenting on this, so here goes..... Unless you are making small batches (ie one gallon), I do not recommend campden tablets. Get powdered potassium metabisulphite (aka k-meta). It is easier to use and more versatile. Steve

    The F pack contains enough sorbate to stop the F pack (which contains much sugar) from fermenting. It does not contain enough sorbate to prevent fermentation of the full batch. If you are concerned, start the kit without adding any of the F pack, then add it once you see active fermentation...

    WineXpert Eclipse Riesling kit help

    Do you like a dry riesling or do you prefer off-dry? Since I prefer a dry riesling, I deliberately add the Suss-Reserve bag to the primary in place of some of the water. So, your wine is NOT spoiled. If you want it to finish off-dry, sweeten after stabilizing, as already suggested above...
