    Vessel for secondary

A lot of people transfer from the carboy back into the primary, add the additives and degas, clean the carboy, and return to the carboy. Yes it means a double transfer but you don't have to buy a second carboy. Also degassing is probably easier in a primary. Steve

    Bentonite at the beginning

Yes, eventually it should settle to the bottom, but it needs to circulate in the wine to chemically attach to the proteins before settling to the bottom. Thats why it is good added pre-fermentation when the CO2 rising gives it a lift to circulate. Also bentonite provides the yeast with...

    3 Month Wine

In the Ferment on Premises business there is a thing called TRUNK AGING. The wine is bottled in the store after 4-5 weeks, put in the trunk of the customer's car, and tastes great when they get it home. I had customers who bottled their wine 4-5 weeks after the yeast was pitched and were out...

    Island Mist Blackberry Cab Advice

Possible? Yes. Desirable? I don't think so. Can you trade this kit in on a nice cheap red kit? Perhaps Vintners Reserve Merlot or CabSauv or Shiraz or something. In my opinion, you'd have better luck producing a decent red than you will messing with this mist kit. Steve

    sediment

WOW what a run on difficult to understand sentence. Yes it sounds absolutely normal, and yes that sounds like the right approach. Steve

    WineXpert Gewurtz kit suggestions

I haven't made the WE Eclipse G'wine, so no comparison available. My favourite regular kit has been the Vineco KenRidge Showcase German Gewurztraminer (sweetness 2). It comes with a Suss-Reserve pack which I add to the primary instead of some of the water. This makes a dry wine so it is not...

Better bottles vs water cooler jugs

The handle in the water bottle can make cleaning it a bit difficult if some sediment gets in there. No handle in a Better Bottle. There are thousands of formulations of PET (#1) plastic. I believe that the BB plastic is designed for alcohol, whereas the water bottle is not. Also I believe...

what is the standard starting gravity for white wine?

As already stated there is no set standard. I just flipped through some carboy tags looking at white wine starting sg. The lowest I saw was 1.082. Others ranged from 1.086 to 1.092. Steve

    RJ Spagnols CRU Select Nebbiolo

What oak came with the kit? Can't really decide to change oak without knowing what the manufacturer suggests. BTW, what yeast? Knowing RJS, probably EC-1118. Steve

    48 hours and no fermentation

Do you have a temperature reading of the must (rather than the outside temp)? Do you have specific gravity readings? Sometimes fermentation can be very quiet (a stealth fermentation). Steve

Advice on faucet for wine room sink

Personally I would like a faucet similar to the suggested gooseneck one. BUT, I also want a faucet that can accept a bottle washer. Steve

    Questions from a Newbie

Not sure what kit you have, but I've NEVER added nutrient to a wine kit. You really should tell us what kit you are making. There are different suggestions for different kits. Steve

Other Anyone tried the Fontana kits from Amazon?

Fontana Wine Kits are from a company called ABC Cork. They have been around for several years now (more than eight). I have not made any of them. HOWEVER, this kit looks like it is based on a 5.5litre bag of concentrate. IMO, there are MANY MANY kits that will be better than this kit...

RJ Spagnols Black Forest Port kit issues

Did you pull the main bag out to make sure that it's not underneath it? This has been the solution for a couple of missing F-packs in the past. Steve
