    I've never seen a kit containing Premier Cuvee. What kits have you seen that came with it? You're right, I would treat PC as if it were EC-1118. Steve

    EC-1118 is included with a lot of kits. I don't have a problem swapping that out. But if a kit comes with something other than EC-1118, then I'll use that. Steve

    What temperature was the wine when you degassed it? Cool liquids hold on to CO2 longer than warm liquids. Also I find that round-and-round stirring (like with a drill) does not degas as effectively as back-and-forth stirring with a paddle. Steve

    That's a bit cool. Make sure you get it warmer for degassing. What is the sg? The only comment from you that I see is "less than 1.020 and I'm just under that". If that's the case then fermentation is NOT finished. This kit should finish around .992. Steve

    I'm going to go with...neither of those two choices are true. Yes, you need to worry about oxidation. But I didn't think it's a big concern over a couple of days when the wine contains a lot of CO2 and some SO2 from fermentation. Steve
