    WineXpert WE Eclipse Riesling

JC5066, When I first started making wine I couldn't wait to bottle my wines. Went by the book, 5 week kit bottle, 6 week kit bottle. They were drinkable but not that good. Fizzy, thin, quite young tasting. Now I always bulk age at least 6 months plus on whites and a minimum of 12 months on reds...

    Snow in CT!

    Other island mist

I usually add 3 lbs. of sugar and about 25% of the f-pac upfront. Ferment to about 10.25% abv. The peach apricot chardonnay is the house favorite. My children drink it year round. Also made for the first time the Merlot Ho-Ho for Christmas. Turned out to be a pleasant surprize. Bakervinyard

    Spring Wine Plans

Matty, I made a bucket each of merlot and pinot noir in 2013. Added a lug each of similar grapes to each. When I bottled the pinot in the spring of 2014I wasn't to pleased with the results. WineXpert Kit Has No Oak Powder

Six months in the carboy. OK, I can do that. I have two, just for this sort of thing. ? Dave, you say that you have 2 carboys. I don't want to be the bearer of bad news but once you get bitten by this obsession you're going to easily need a couple dozen more. LOL, Bakervinyard

    Gifts this year

My wife likes "high tea " I took her for her bithday last year at a ritzy hotel in Boston. It was really nice. Expensive as all heck. The Mrs. enjoyed it a lot. Did I mention I was the only guy there. Lol. If your wife enjoys music take her to a concert or maybe a jazz club. Bakervinyard

I made this kit 2 years ago. I checked my notes and it stalled at 1.016 also after adding my dextrose. I tried everything, heat belt, stirring and even tried more yeast. I wasn't able to get it going again. I went ahead and stabilized. cleared and added the whole f-pac. The ending s.g. was 1.040...

    What's in your glass tonight?

Just opened a bottle of Chilian Pinot Noir. I started May 2013, with a juice bucket and added a lug of Chilian Pinot Noir grapes. I wasn't too crazy about it when I bottled this past June. But the last two bottles I opened it seems to be coming around. Bakervinyard
