I posted earlier that about a year ago I did two batches of WildGrapes Shiraz. One I followed directions and bottled at ~ 4 week mark. the other I sat in a carboy for a year, then we bottled. Wifes likes the wine from the carboy better than the early bottled wine . I like the early bottled...
Mine climb down from the trees, over fences, chew through the bird netting, etc. And my dogs??? yawn, or wanna play ball? Ball, ball, ball, ball, ball..... ad nauseum.. of course a good CO2 Pellet gun works great ifI am sitting in the back yard!

No. One of the first kits I made. I made two Wild Grapes Shiraz. Followed directions. Bottled at 4 weeks. Then 2nd kit carboy at 4.5 weeks. Put several bottles away. The Shiraz in carboy, now bottled, tastes better than the early bottled.
Made a cheap wine kit a year ago. After 3 weeks. meh. At 3 months. Hmmm its ok. At 7 months. Not bad, in fact it is good. Now after a year in a carboy. OMG this is really good.
