    Persimmon wine... or jello?

Thanks - the Keller website is defunct now. Yes, I'd seen a lot of comments about his low fruit percentages. I wish I knew the poundage of my harvest. I just collected by volume and it's all mash now. But a gallon of water is about 8 lb, and the fruit is pretty close to the same density, so it...

    Persimmon wine... or jello?

I think I just made some persimmon jello. I'm trying my first batch of wild persimmon wine. This is maybe my eighth or so winemaking attempt so far, all fairly small batches, and most have been reasonably successful. So I'm not TOTALLY a newbie - but close. I mashed all the extremely-ripe...

    Dissolving Label Paper - cool!

Yeah... this is... another magnitude entirely. Me and my one-glass-every-other-day drinking pattern... I'd be a decade finishing one wall of what I see there. LOL.

Super fast ferment - any concerns?

To reiterate part of my original question: should I: - let it rest on the skins for a few days for complexity and flavor? - decap it and let the juice sit for a couple more days in primary? - go ahead to secondary right away?

Super fast ferment - any concerns?

One nice thing about smaller batches: I can iterate faster to learn faster. A bottle lasts me a week or so, and if I had a couple dozen bottles, I'd only need to make a couple batches per year. It would take a LONG time at that rate to figure out this rather complex and fascinating...

Super fast ferment - any concerns?

Trust me, I'd LOVE to make a larger batch. I'd hoped for 2 gallons, but the deer found my grapes one freaking day before harvest. I'll add higher fencing next year.

Super fast ferment - any concerns?

Bottom line questions: Should I be worried about a super-fast fermentation (just over 2 days to 0.988 SG)? How fast should I move to secondary? Two days ago I pitched Red Star Premier Classique yeast into a gallon of mashed grape must freshly picked from my front yard vine (after the usual...

    Dissolving Label Paper - cool!

By the way, don't make the mistake I made on the first purchase, and get the thermal type paper - when you print in a laser printer, it turns completely black under the heat.

    Dissolving Label Paper - cool!

I wanted something that would be easy to remove later, and I found this water-soluble label stock on Amazon. It dissolves in almost no time, including ALL the glue. It takes maybe 20 seconds under running hot water to have a completely clean bottle, and all the "paper" and glue literally...

    Hello World!

Yeah... but somehow the purist in me rebels at the idea of "contaminating" my wine from fruit I grew and picked with some commercial product. Yeah, I know, that's silly, but...

    Hello World!

At the moment, my challenges are learning ABV calculations and how to really use my measuring tools correctly (refractometer, hydrometer, pH meter). I'm considering purchasing a TA test kit. Just today I figured out that I needed to correct my refractometer readings for alcohol, which explains...

    Hello World!

Here's introducing myself! I grew up wishing that someday I'd inherit that beautiful big 5-gallon handblown green-glass carboy wrapped in wicker sitting on Grandma's hearth, and I finally got it. Years later, I finally decided to actually start using it, so in 2022 I bought all the gear I'd...
