    Leaking Variable Capacity Seal

Winter? We're just coming into spring. Buy a better gasket. Get the black one instead of clear, they are far superior.

    A prunning observation

With over 30,000 acres along a 50 mile stretch of Concord Grapes to prune they need to start early, especially since you can't hardly get into vineyards during several months of the winter. Besides pruning you're replacing from hundreds to thousands of posts plus wire.

    A prunning observation

Concords are pruned around here right after harvest while the workers can still get into the vineyards before snowfall. The hybrids and vinifera are pruned late in the winter once the workers can get back into the vineyards.

Is it possible to make a sweet wine without pottasium sorbate?

After about 12 months Sorbate taste does come out. Some people are very sensitive to it and taste it even sooner. I do not detect it but I know several people that do.

    Forced give name & e-mail

I get it at work but not at home. In the upper right hand corner of that pop up is a close button you can click on so it goes away. The button is hard to see, I think the font is in white.

    Neat pattern forming

Not unusual at all. Farmers see that once in a while and they're call crop circles. You have aliens in your wine marking their territory.

    Juice vs grapes

You will never get the same results from Chilean juice pails as you do form pressed grapes. You have more control with fermenting the grapes on skins than pressing. The juice pails are hot pressed.

You can make a small fortune in wineries if you have a huge fortune to put into it.

    Mlf testing

I recommend the 300. I do not recommend the Vinmetrica SC-50 MLF Analyzer. Get a chromatography kit They seem intimidating but they are so freaking easy to do unlike the sc-50

    Foam removal

Just lay the lid on your fermentation pail. There is no need for an airlock during fermentation
