    I haven't been doing this long, but I guess I'm skeptical that mold is growing in a pretty good kit wine you've made after fermentation and sulfiting.

    Are you sure this just isn't bentonite somehow agitated up from the bottom of the carboy given your at the clearing and stabilization stage? I don't what that kit come with, but I have noticed I had some bentonite that really stirs to dissolve and I've and Bentonite that clumps.

    I was wondering the same thing. I don't want to commit to this until I find a comparable commercial wine to sample. Zin-Cab Sauv blend is kind of beyond usual experience and bourbon barrel sounds kind of gimmicky. Nothing wrong with that, but I'd like to know what I'm getting into.

    I concur with the Eclipse Stag's Leap...if you want to go a little cheaper try the Winexpert Intl French Merlot. Lot of oak in that kit. Also, the LE New Zealand (Hawkes Bay) Merlot which I have clearing looks good if you can find it anywhere.
