    I had the same issue with a 25 liter barrel, I filled it with hot water and put it in a vat of hot water and it stopped.

    My wine room is 12' x 18' and seems small at times. I didn't see any suggestion for a wine rack. Mine holds 260 bottles, you need somewhere to age the wine while you keep making wine.     For all the work put into the staves, you can buy oak spirals. which work really good.

    I would not use them, spirals and chips specifically for wine make is preferred and a safe and effective way to add oak flavor to wines. But you must taste test during the process so not to over oak. ask me how I know..

    Bottle Sanitizing/Efficacy of KMS

    I rinse my recycled bottles with tap/city water, sanitize using the bottle flusher do-hicky, put on the bottle draining/drying tree rack to drain and fill with wine. They are never drained dry before filling. Been doing it this way for years. never had an issue.

    Basket press advice...

    All in all a pretty good find and great little project. If you intend to replace the wood on the basket make sure you use a wood that won't warp to much and strong enough to handle the pressure of the press. These old baskets presses can generate tons of pressure Maple perhaps.

    Is bottling while still wet with K-Meta an issue. I never wait til the bottles are dry before filling.

    We never seal the basket. We power wash after pressing, K-Meta and store until the next season. All's well.
